Our New Year's Resolution: Becoming Self-Sufficient Part I

My New Year's Resolution (and therefore that of my unfortunate family) is to become self-sufficient food-wise by the end of the year.  Now I know this isn't completely possible no matter how self-sufficient someone is.  Even back in the pioneer days, there were trading posts where people could trade for things like salt.  And since the ranch is in the desert, we're not going to be raising any fish (although technically we could build a pond and we do have plans for this...eventually).

Our plan is to have a big enough vegetable garden to feed everyone in our family as well as raise enough animals.  Our goal is to not have to purchase any fruits, vegetables or meats by the end of the year.  A subgoal is to also learn to eat these things.  I admit that I have quite the taste for the modern diet as well as the knowledge of only modern cooking.  In other words, I can competently open a plastic bag, pour its contents into a dish and pop it in the microwave.  However, the finer arts of cooking are a little vague.  

I can actually make a few things from mostly scratch: spaghetti, enchiladas, macaroni and cheese and a some other stuff.  But this resolution is more than just learning to cook things from a recipe-it's also how do you make the noodles for spaghetti?  How do you make the tortilla shells for enchiladas?  How do you make cheese for the macaronis?  In other words, this is going to be really, really, really, really, really, really, really, really, really, hard.
